Apricots are naturally high in potassium, which we lose when we’re sweltering away in the hot sun, and since the signs of both sweltering and low potassium can include fatigue and irritability, we think that an apricot popsicle is just what the doctor ordered!
- 2 medium apricots
- 4 bags black tea
- 2 cups boiling water
- 3 tablespoons honey
- 1⁄4 cup apricot nectar
- Boil water and brew tea. Steep for about 5 minutes. Add honey to the mix and stir until dissolved. Stir in apricot nectar.
- Slice apricots into thin slices and add several to each popsicle mold. Pour tea mixture over the slices and fill the popsicle molds. Transfer to freezer for 4+ hours.
- Once frozen, remove molds from freezer and run under warm water. Enjoy!
