  • 6 ears fresh corn on the cob husked
  • Vegetable oil
  • 3 tablespoons lime juice
  • 3 tablespoons sour cream
  • 2 tablespoons mayonnaise
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon cumin
  • Dash cayenne pepper
  • Salt and pepper to taste
  • 1/4 cup crumbled cotija
  • 1/4 cup chopped fresh cilantro


  • Preheat the grill to high heat. Brush corn with vegetable oil then grill, turning every 2-3 minutes, until slightly charred on all sides. Cool and then cut kernels off the cob into a medium bowl.
  • To the bowl, add lime juice, sour cream, mayonnaise, chili powder, smoked paprika, cumin, cayenne, cotija and cilantro. Stir then add salt and pepper to taste. Garnish with additional cilantro.
